When to Sow

Sow seeds one month before last frost date when the soil reached about 50 degrees.  Here in CT I sow my beets around mid April for spring harvest.  For a Fall harvest, I sow seeds in July.

Where

Sow the  beets in an area that gets at least 6 hours of sun.

How

Pre soak beet seeds for 24 hours for better germination.  Sow seeds 1 inch deep 2 inches apart.  If you sow closer just will have to thin once they germinate.

Care

Provide plenty of water and do not add excess nitrogen to soil (such as blood meal) as it would result in tons of green growth but little root growth.  I use Coast of Maine products whether in raised beds or in containers, my products are all linked.

Use

I eat the entire plant.  I sauté the greens with olive oil, salt and pepper.  I usually roast the beets in the oven with salt and pepper versus pickling.  I also juice beets as they provide many health benefits.
